Well that’s quite a mouthful to say, eh? Yes I’m Canadian. This was so easy to make and so delicious. I mixed this warm and gooey cupcake with creamy coconut greek yogurt and voila! Healthy yummy dessert is served. I’m loving this trend of healthy desert-ing. Which means that I can have desert for breakfast, lunch, and dinner sans an ounce of guilt. So without further adieu here is the recipe for you to enjoy as much as me and my family did.
Ingredients in order of appearance:
3 ripe organic bananas
2 large eggs from organic fed farm raised chickens
1/2 cup organic greek yogurt
1/3 cup all natural honey
1 cup organic all-purpose flour
1/2 cup organic dark cocoa
1 teaspoon baking soda
1/2 cup organic dark chocolate chips
Preheat oven to 350 degrees Fahrenheit. In a large bowl mash the bananas. Mix in the eggs, greek yogurt, and honey. Then add the flour, cocoa, baking soda, and the chocolate chips. Line the muffin tin with cupcake liners and spoon in the batter evenly. Bake for 45 mins at 350 degrees Fahrenheit. Let cool for 15 minutes and serve with organic greek coconut creamy yogurt or on it’s own. Enjoy!
